Goat Cheese Bruschetta

                          

Remember when my boyfriend brought home that amazing loaf of bread from an Italian pizzeria and I made these delectable Avocado Toasts? Well, there was plenty of bread left over, so I decided to gather up a few ingredients in my fridge and put a spin on the classic bruschetta. I swapped out some goat cheese for the traditional mozzarella, and the creamy topping holds the tomato onto the bread perfectly!

Goat Cheese Bruschetta

Ingredients:
  • freshly baked loaf of bread, 1/2 inch slices
  • 2-3 oz. goat cheese
  • 1 roma tomato, seeded, and chopped
  • 1 garlic clove, minced
  • 3-4 basil leaves, sliced
  • 1/2 tbsp. olive oil
  • 1/2 tbsp. balsamic vinegar
  • salt and pepper to taste
In a bowl, mix together all ingredients except for the bread and goat cheese.


Toast bread slices until lightly golden. Spread each toast with goat cheese. Top with tomato mixture and enjoy!
