Someone at work the other day asked me what my last meal would be if I were on death row. Random lunch converstaion, I know, but my immediate answer was breakfast. I could eat breakfast for every meal. And just to narrow it down a bit, I could eat blueberry pancakes for every meal. What's second best to blueberry pancakes? Not being on death row for one (haha), but blueberry muffins come in a close second to some sweet flapjacks. I haven't enjoyed overnight oats in a few weeks, and when I ran across this recipe I LITERALLY ran down to my kitchen to throw it together for breakfast the next day.
Blueberry Muffin Overnight Oats
Ingredients:
- 1/2 cup old-fashioned oats
- 1/3 cup almond milk
- 1/4 cup plain greek yogurt
- 1 tsp. almond extract
- 1 tbsp. chia seeds
- 1 tbsp. agave nectar (or honey)
- fresh bluberries
Mix all of the ingredients together in a jar or an airtight container and let sit overnight in the fridge. Enjoy for breakfast the next morning!
