Paleo Jalapeño Chicken Burgers with Guacamole

Happy Monday everybody! Let's take a minute to talk about burgers. Were in the thick of summer, barbeque grills are out (not in my case, but it's on the wish list), and I have been inspired by some pretty great burger recipes online. These paleo burgers caught my eye after binging on the fourth of July on champagne, margaritas, tacos, and one or two desserts. I opted for a clean meal, but didn't want miss out on flavor. By skipping the bun and topping these chicken burgers with guacamole, you'll forget about that bread in no time.

Chicken Jalapeño Burgers

Ingredients:
  • 1 lb. ground chicken
  • 1/2 onion, chopped
  • 1/2 jalapeño, minced (take the seeds out if you want less heat)
  • 1 1/2 tbsp. chopped fresh cilantro
  • 1/2 tsp. cumin
  • 1/2 tsp. paprika
  • 1/4 tsp. red pepper flakes
  • Salt and pepper to taste
In a medium mixing bowl add all ingredients together and mix with your hands. Form two large patties, or four slider sized patties.

Preheat grill or stovetop grill medium high heat. Spray with non stick cooking spray. Grill on both sides for 5-7 minutes on each side.



Top each burger with a large spoonful of homemade guacamole, and serve.
