Aren't they beautiful? Go ahead, envy my Friday morning pancake feast. May I intorduce you to Cinnamon Almond Peach Pancakes. Peach season is in full bloom, and the second you walk into the produce section you can smell their sweet nectar. We accidentally went with a mixture of sweet peaches and white peaches, and was pleasantly surprised. And if you think these look semi difficult to make, you will be happy to know that these are made from a boxed mixed, just with a little added flair!
Cinnamon Almond Peach Pancakes
Ingredients:
- Bisquick box mix
- milk (amount depends on # of servings)
- eggs (amount depends on # of servings)
- dash of almond extract
- dash of ground cinnamon
- 1 white peach, thinly sliced
- 1 sweet peach, thinly sliced
In a large bowl, mix the biquick mix with milk, eggs, almond extract, and cinnamon together.
Preheat a large griddle over medium-high heat and prepare with non-stick cooking spray. Ladle 1/2 cup of batter onto the griddle and layer slices of peaches on top.
Cook for 1-2 minutes on first side until lightly browned on bottom and starting to bubble on top. Then flip over to second side and finish cooking for another minute or two.
Repeat until all batter and peach slices have been used. Serve warm with butter and syrup.
