Pumpkin Coconut Overnight Oats

Summer is on its way, and its on its way FAST! While it is supposed to hit the 100's here in Pheonix in the next few days, I am stuck in fall and craving pumpkin. Luckily for me, and you, they sell canned pumpkin all year round and found its way into my breakfast this morning.

Pumpkin Overnight Oats

Ingredients:

  • 1/3 cup oats
  • 1/4 cup unsweetend almond milk
  • 1 tbsp. water
  • 1/4 cup pumpkin puree
  • 1/8 tsp. pumpkin pie spice
  • tiny pinch of salt
  • 1 tbsp. maple syrup (or agave nectar)
  • handful of chopped walnuts
  • dash of cinnamon
Mix together the oats, almond milk, water, pumpkin puree, pumpkin spice, and salt in a bowl. Cover with saran wrap and place in the fridge overnight.

Remove in the morning and top with walnuts and cinnamon. Drizzle with maple syrup and serve.
