Confetti Kale Salad

A couple of weeks ago I signed up for a an amazing workout challenge on ToneItUp.com. The two girls that started the site are professional trainers and nutritionist, providing their followers with recipes as well as daily workouts and tips to keep a healthy lifestyle fun! As I was checking out their recipes, I stumbled upon their "Confetti Kale Salad". I midified it slightly, but all in all, the great flavor of the homemade dressing, mixed with the fresh veggies is a great way to fill up healthily after a great workout!

Confetti Kale Salad

Ingredients:
  • 4 large leaves of kale
  • 1 cup red bell pepper, thinly sliced
  • 1/2 cup olive oil
  • 1 tbsp. chia seeds
  • 2 tbsp. red onion
  • 1 tbsp. agave nectar
  • 1 tbsp. dijon mustard
  • 1/2 lemon, juiced
  • 1 tsp. sea salt
  • 1/2 tsp. black pepper
  • 1/2 tbsp. minced garlic
  • 1 tsp. mustard powder
Wash and dry the kale and then strip the leaves from the large thick stem. Discard the stems and rip the leaves into smaller pieces. Massage the kale using your fists until the leaves turn a bright green appearance.

Place the kale into a bowl, then top with the sliced bell pepper. 

For the dressing, pour the oil, red onion, agave, mustard, garlic, salt, pepper, and mustard powder into a blender. Blend until smooth. Place in the fridge if you aren't planning to use right away.

Pour the dressing over the salad and toss before serving.
