Key Lime Pie Overnight Oats


Remember when I made Chocolate Covered Strawberry overnight oats last week? Well we are keeping the oats train rolling. Today, we steer away from the rich chocolate oats and take a turn to tropical paradise with key lime and coconut overnight oats. Easy to assemble, but tastes like a million bucks, breakfast is ready with just a few minutes of prep time the night before, and waiting there for you in the morning.

Key Lime Pie Overnight Oats

Ingredients:
  • 1/3 cup old-fashioned oats
  • 1/3 cup water
  • 1/3 cup unsweetened almond milk
  • 1/3 cup non-fat plain greek yogurt
  • 1 tsp. chia seeds (optional)
  • 1 tsp. stevia
  • zest from 2 key limes (it is important to get key limes and not regular)
  • juice of 1 key lime
  • 1/4 tsp. coconut extract
  • 2 tsp. toasted coconut
In a microwave safe bowl, add the oats, water, and almond milk. Cook in the microwave until the oats are almost fully cooked, just slightly runny. Stir in the greek yogurt, chia seeds, stevia, zest, lime juice, and coconut extract. 


Cover and place in the fridge overnight. In the morning, fluff up with a spoon and top with toasted coconut. Add a little bit of almond milk if it seems a bit too dry. Serve cold.
