That's right folks. You read it here first. Chocolate Covered Strawberries. For breakfast. I have decided, after spotting dozens of blog posts and recipes, to hop on the overnight oats train. There are so many different flavors, and the oats are so verstaile, that I see this train stopping NO time soon! For my first combination, but certainly not last, I decided to go with "Chocolate Covered Strawberry" overnight oats. Honestly, who doesn't like chocolate, or strawberries, let alone chocolate covered strawberries for breakfast. Plus, chocolate is actually healthy for you if eaten in the right context. This recipe is chock full of protein and whole grains, how can it NOT be good for you? By using cocoa powder and fresh fruit, I combined the perfect sweet treat for breakfast. Plus did I mention these oats are chocolate covered strawberry oats? Just wanted to make sure I hadn't lost you.
Overnight Oats
Ingredients:
- 1/2 cup old-fashioned oats
- 1/2 cup unsweetened vanilla almond milk
- 2 tbsp. vanilla greek yogurt
- 1 tbsp. cocoa powder
- 1 tbsp. stevia in the raw
- 1 tsp. chia seeds
- 1 tsp. flax seeds
- 1/4 tsp. instant espresso
- pinch of salt
- 3 strawberries, sliced
Add oats, milk, yogurt, cocoa powder, stevia, chia seeds, flax seeds, espresso, and salt to a bowl and stir until combined.
Cover with plastic wrap and let sit in the fridge overnight.
To serve, layer oats and sliced strawberries in a glass or bowl. Serve cold.
