While we can all enjoy a great nacho from time to time, sometimes it's nice to be able to enjoy ths great snack without feeling guilty. By swapping out ground beef for shredded rotisserie chicken breast as well as low-fat beans, this comfort food with a twist will leave you feeling satisfied without the couch potato food coma afterwards.
Skinny Chicken Nachos
Ingredients:
- Tostitos scoop chips
- Rotisserie chicken
- Reduced fat refried beans
- Shredded Mexican cheese
- Salsa
- Sour cream
- Fresh cilantro, chopped
Preheat oven to 350 degrees.
Shred and chop rotisserie chicken into small pieces. Place a single layer of Tostitos chips in a baking dish. Sprinkle chicken into each chip. Top with a teaspoon of brands into each chip.
Add one teaspoon of salsa to each chip and top with as much or as little shredded cheese as you would like.
Bake until cheese is melted, about 5 minutes. Top with sour cream and fresh cilantro. Serve hot.
