Skinny Cheese Fries


Yesterday while getting ready for the big game, I decided to try out a new recipe for skinny cheese fires, loaded with bacon, green onions, and spicy jalapeños. The paprika brings a great smoky flavor, and the ranch dressing is a perfect match. 

Skinny Cheese Fries

Ingredients:
  • 2 russet potatoes
  • olive oil
  • paprika
  • 2% shredded cheddar cheese
  • 1 slice thick center cut bacon
  • Small can of sliced jalapeños
  • Green onions
  • Light ranch dressing

Preheat oven to 400 degrees.

Cook bacon in a skillet until crispy. Once cool enough to handle, chop into small pieces, set aside. Meanwhile, cut potatoes into thick sticks, about 1/2 inch thick.

Cover potatoes in olive oil and sprinkle with a tsp of paprika. Later on a baking sherry and bake for 30 minutes, turning once to brown on both sides.

Remove potatoes once brown and crispy. Cover with cheese, chopped green unions, jalapeños, and bacon. Return to oven until cheese melts, about 5 minutes.

Serve with light ranch dressing or low fat sour cream if you wish.
