Quinoa Black Bean Burgers

I'm bringing back an oldie-but-goodie recipe, using my ultimate favorite ingredient, quinoa. I love being able to swap different carbs and meats out and adding quinoa as the main protein in my meals. It may not be the same as a greasy cheeseburger from your favorite fast food shop, but it leaves your belly and your wallet full without the guilt of the fatty and processed ingredients. Feel free to make it your own by adding different chopped veggies and spices to your liking.

Quinoa Black Bean Burgers

Ingredients:
  • 1 can black beans, drained and rinsed
  • 3/4 cup cooked quinoa
  • 2 tbsp. onion, chopped
  • 1 garlic clove, minced
  • 1/4 cup red bell pepper, chopped
  • 1/2 tbsp. cumin
  • 1/2 tsp. salt
  • 1/2 cup panko breadcrumbs
  • 1 egg
  • cooking spray
In a large bowl, mash the black beans until creamy, leaving some lumps.

Add in the quinoa, onion, garlic, and bell pepper. Mix well. 

Then add in the cumin, salt, and panko. Once combined, add the egg and mix well.

For the mixture into 5 patties. 

Preheat a large skillet or griddle. Spray with cooking spray and cook patties on each side for 4 minutes on each side. 

Serve on a bun or with a bed of lettuce for a Meatless Monday or even just for a simple healthy meal.


** These can be frozen in an airtight container for future use **
