Breakfast Pizza


Two words: breakfast pizza. While you can easily modify this to your own liking, I highly suggest using the recipe as follows. I made this on Saturday morning for breakfast, and I could not believe how good it turned out! HDFB Tip: I made my dough the night before and let it sit over night in the fridge, which made it more convenient to just throw onto a baking sheet in the morning.

Breakfast Pizza

Ingredients:
  • 1 ball pizza dough (store bought our home made) at room temperature (let sit out for 30 minutes)
  • 4 slices of bacon
  • 1 1/2 cups shredded mozzarella cheese
  • 3/4 cup grated parmesan cheese
  • 4 eggs
  • 1 1/2 tbsp fresh parsley, chopped
  • 1 1/2 tbsp fresh chives, minced
  • 1 small shallot, chopped
  • 1/2 cup crumbled goat cheese
  • salt and pepper to taste
Preheat the oven to 450 degrees. If you have a pizza stone, allow that to preheat in the oven as well.

Meanwhile, cook the bacon in a skillet until brown. When cool enough to handle, chop roughly into pieces.

Carefully handle the dough, stretching it into a large circle. Place dough onto a lightly floured pizza stone, or baking sheet. Cook the dough round in the oven for 5 minutes. Remove.

Sprinkle the mozzarella and parmesan onto prepared dough. Then add the bacon pieces on top of the cheese. Finally, crack the four eggs onto the pizza. Sprinkle each egg with salt and pepper. Cook in the oven for 12-15 minutes, until the cheese is melted, and the egg yolks are cooked to your desired consistency.

Carefully remove pizza and sprinkle with parsley, chives, shallot, and goat cheese. Let rest for 2 minutes before slicing.

Using a pizza cutter, cut the pizza into squares, about 3x3 inches. Then use your pizza crust as a vehicle to devour those delicious runny yolks! Just sayin'!
