Spiced Black Bean and Grilled Avocado Tacos with Goat Cheese

My roommates and I have really been putting the costco sized box full of black beans to good use lately with my Tex-Mex Turkey & Black Bean Burgers and my Spicy Black Bean Burgers, but today I focus on the burger's distant cousin, the taco. Black beans, cooked down in spices, topped with avocado, and goat cheese, they are a refreshing twist on summertime tacos.


Spiced Black Bean Tacos
(Makes 4 tacos)


Ingredients:
  • 1 tbsp. cumin
  • 2 tbsp. chili powder
  • pinch of dried red pepper flakes
  • 1 can black beans, with liquid
  • 1/2 avocado
  • 2 tsp. olive oil
  • 1/2 cup goat chese
  • 4 carb balance tortillas
In a dry skillet over medium heat, toast the cumin and chili powder for 2-3 minutes until fragrant.

Add red pepper flakes, black beans and their liquid. Heat over medium-low until liquid is almost cooked out 10-15 minutes. Taste and adjust pepper if needed.

Slice avocados in half, remove the seeds. Brush with olive oil and place cut side down on grill or hot pan. Let cook until lightly charred. Remove and carefully slice fruit out of skin.

To assemble place 1/8 of bean mixture in the center of a heated tortilla, layer avocado and goat cheese on top.

Feel free to make these your own with hot sauce, cilantro, onion, whatever, but trust me they are delicious just as shown!
