Speedy Sriracha Chicken

What's easier than a 3 ingredient dinner? This week has been chaos in my house, since my roommate's boyfriend is moving in with us while in transit between selling his home and purchasing a new one. While we are gaining a great friend, roomie, and handyman, we have to make sure we all keep well fed since we will be unpacking, re-organizing, and cleaning house. This recipe was so simple. I threw the 3 ingredients together, let it marinate overnight in the fridge, and then baked the chicken when I got home from work. From start to finish it took me 30 minutes.

Sriracha Chicken

Ingredients:

  • 3 chicken breasts
  • 1/4 cup light sodium soy sauce
  • 1/4 cup Sriracha
Whisk together a 1:1 ratio (I used 1/4 cup) of soy sauce and Sriracha. Pour over the chicken in a gallon freezer bag on in a baking dish with deep sides so that marinade does not leak over sides.

Let marinate overnight, or all-day. Pre-heat oven to 350 degrees. Bake for 20 minutes until cooked through.
