Mama Soph's Madeleine Cookies

Every morning my boss stroll sin to the office with her fabulous new designer heels on, her LV purse, and of course, the ultimate accessory; Starbuck's coffee. But not only does she have her coffee, but mid-morning she pulls out her favorite madeleine cookies. Every day. I have been thinking about what to get her for her birthday that was earlier this week. The first thing to come to mind? Homemade madeleine cookies. I searched and searched and searched for the Starbuck's recipe, borrowed a madeleine pan from the MA at work, and made 2 batches of the delicious buttery french delights. 

French Madeleine Cookies


Ingredients:

  • 1/4 cup unsalted butter, melted and cooled
  • 3 eggs, room temperature
  • 1 cup sugar
  • 1/4 tsp. salt
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. almond extract
  • 1 cup flour
  • 1/8 tsp. baking powder
  • fresh lemon zest
Preheat oven to 375° F. Butter and flour the madeleine pans. If using a non-stick pan, only use cooking spray.

Beat the eggs, salt, and sugar together until thick, 8 minutes. Add the vanilla & almond extract.

Fold in the flour, rapidly, but gently. Fold in the butter & lemon zest gently.

Quickly spoon the mixture into the madeleine pans, about 3/4 full.

Bake until golden, about 8 minutes. Watch carefully. 

Remove from pans, cool on racks.
