BBQ Chicken Burgers


If you guys thought I was done with the BBQ recipes when I posted my BBQ Chicken Enchilada Casserole or my BBQ Bacon Turkey Meatloaf recipes in the last week, then you would be mistaken. I've got recipe ideas coming out of my ears lately, but I just can't get enough of meals topped with BBQ sauce, and these burgers are no exception. They not only have BBQ inside of the burger, but also perfectly placed atop the bun. Paired with some smokey gouda and some quickly caramelized onions, these are a surefire way to say goodbye to the winter, and hello to the spring weather!

BBQ Chicken Burgers

Ingredients:
Makes 4 burgers
  • 1 lb. ground chicken breast
  • 1/4 cup finely grated cheddar cheese
  • 1 tsp. ground paprika
  • 1/2 tsp. onion powder
  • 1/4 tsp. garlic powder
  • 1/4 tsp. black pepper
  • 1/4 tsp. sea salt
  • 1/4 cup homemade BBQ sauce
  • 4 whole wheat buns
  • 1/2 onion, thinly sliced
  • 1/2 tbsp. olive oil
  • 4 slices smoked gouda for topping
  • BBQ sauce for topping
  • 4 pieces of romaine lettuce for topping
In a large bowl, combine chicken, BBQ sauce, paprika, onion powder, garlic powder, salt, pepper, and cheddar cheese. Mix until just combined, then form 4 patties.

Preheat the grill or an indoor skillet and cook the burgers until fully cooked through, about 8 minutes on each side. They should be juicy and cooked, but not dried out.

While burgers are cooking, heat skillet over medium heat and add the olive oil. Add the sliced onions with a pinch of salt and saute until they caramelize, about 10 minutes.

When the burgers are ready, top with gouda, caramelized onions, BBQ sauce, and fresh romaine. Serve warm.
