Healthy Baked Chicken Bites

Remember that stage where you would eat nothing but chicken nuggets for every single meal. And when your mom was feeling extra generous she would buy the dinosaur shaped ones from the store? Ahhhh, those were the days..but who says we can't still enjoy a chicken nugget here or there? These chicken bites are a modified version of those fried nuggets we would dunk into our favorite sauces as a kid. Baked instead of fried, you will get that crunch on the outside without all of the grease. I served these with a Sweet Corn Quinoa on the side (recipe to follow).


Chicken Bites


Ingredients:
  • 2 chicken breasts, cut into bite size pieces
  • Salt and pepper
  • 2 tsp olive oil
  • 6 tbsp whole wheat Italian seasoned bread crumbs
  • 2 tbsp Panko bread crumbs
  • 2 tbsp grated parmesan cheese
  • Cooking spray

Preheat oven to 425 degrees. Spray a baking sheet with cooking spray to coat evenly.

Place olive oil in a bowl, and the bread crumbs, panko, and parmesan in another bowl. Season the chicken with salt and pepper. Coat chicken with olive oil in first bowl. Then in small batches coat chicken with crumb mixture.

Place on baking sheet and spray tops of chicken bites with cooking spray. Bake for 8 to 10 minutes. Turn over and finish cooking for 4 to 5 minutes. Serve warm.
