Chipotle Sloppy Joes

This past week I got a little inspiration from my mom for this Sunday night meal. I went to her house for a visit and saw a recipe for spicy sloppy joes on her kitchen counter, which I of course edited to my liking to include ground turkey, and served them over slider-sized King's Hawaiian rolls. With just enough heat and a side salad, it was a perfect end to a great weekend.

Chipotle Sloppy Joes


Ingredients:

  • 1 lb. ground turkey
  • 1/4 cup chopped onion
  • 3/4 cup ketchup
  • 1/2 cup frozen corn
  • 1/2 cup black beans
  • 1/2 cup tomato sauce
  • 1-2 chipotles in adobo
  • 1/2 tsp. cumin
  • 1/2 tsp. chili powder
  • 1/4 tsp. crushed red pepper (optional)
  • 1 tsp. cilantro
  • salt and pepper
Heat large saute pan on medium-high heat. Brown turkey and onion until cooked. Drain any extra liquid and return to pan. Add ketchup, corn, beans, chipotle peppers, cumin, chili powder, and red pepper if desired. Bring to a boil for 5 minutes. Add cilantro, salt, and pepper to taste. Serve.
