Super Shrimp Salad


I seem to be on quite the seafood kick lately. In the past week I have dined on scallops, fish and chips, ahi tuna steaks, sushi, and this here shrimp bowl. Tossed with a spicy sauce and veggies, this is quite filling! If you're not a fish easter, feel free to try it with some chicken!

Shrimp Bowl

Ingredients:

  • 10 thawed shrimps,  tails peeled off
  • 1/3 cup black beans
  • 1/3 cup corn
  • 1/3 cup shelled edamame
  • 1 tbsp. soy sauce
  • 1 tbsp. sriracha
  • salt and pepper to taste
In a skillet, heat up the soy sauce and sriracha. Add the shrimp and cook for a minute or two on each side, until pink and cooked through. Add in the beans, corn, and edamame. Season with salt and pepper to taste and enjoy while warm!
