Quinoa. My other boyfriend (sorry Andrew!) I try to eat it in everything. I have used it in my burger recipes, muffins, salad, and have a bread recipe in my back pocket for a rainy day (we don't get much of them here in AZ). But today is a very simple, spring, green bowl of hearty quinoa goodness. From start to finish this takes no more than 20 minutes, and is perfect for a single serving! Happy Makes Monday.
Green Garden Quinoa Bowl
Ingredients:
- 1/4 cup quinoa
- 1/2 cup water
- 1/2 zucchini squash, sliced and quartered
- 2 crowns of broccoli, chopped up
- 1/2 of an avocado, chopped into squares
- 1 tsp. olive oil
- 1 tsp. lemon juice
- salt and pepper to taste
In a small pot, add in the quinoa, water, zucchini, and broccoli. Bring it to a boil and then let simmer for about 10 minutes until all of the water has been absorbed.
Remove it from the stove and add in the avocado while still warm. Drizzle your bowl with olive oil and lemon juice. Season with salt and pepper and enjoy!
