Peanut Butter & Banana Chocolate Chunk Cookies

No egg. No flour. No sugar. But how could they possible taste good? These cookies are actually healthy, using ripe bananas, all-natural peanut butter, coconut oil, oats, and a scoop of chia seeds. An added bonus is that they actually hold together pretty well given the fact that they don't have eggs or flour, and they are really delicious. Peanut Butter & Banana Chocolate Chunk Cookies

Ingredients:
  • 3 large, very ripe bananas
  • 1/2 all natural peanut butter
  • 1 tsp. vanilla
  • 1/4 cup coconut oil
  • 1 tbsp. chia seeds
  • 2 cups old-fashioned oats
  • 1/3 cup coconut
  • 1 tsp. baking powder
  • 1/4 tsp. cinnamon
  • 1/4 tsp. salt
  • 1/2 cup-1 cup chocolate chips
In a medium bowl mash the banana, peanut butter, vanilla, oil, and chia seeds together.

In another medium bowl whisk together the oats, coconut, baking powder, cinnamon, and salt.

Add the dry ingredients to the wet, incorporating the chocolate chips at the end until well mixed.


Scoop by tablespoons onto a baking sheet coated with cooking spray. Cook at 350 degrees F for 12-14 minutes or until set.
