Individual Baked Brie with Cranberries and Pistachios


I recently hosted a holiday potluck and white elephant gift exchange for a group of close friends, and the second that I saw this recipe, I knew I just had to make it. This was actually 1 of 3 brie dishes that made an appearance at the party, but all were delicious in their own unique ways. This took me all of ten minutes to put together, and they were a huge hit! 

Individual Baked Brie with Cranberries and Pistachios

Ingredients:

  • 3 oz. light brie, skin removed, cut into (15) 1/2 inch cubes
  • 4 tbsp. dried cranberries
  • 4 tbsp. chopped pistachios
  • 2 tbsp. honey
  • 15 mini Phyllo Shells
Preheat the oven to 325 degrees F.

Combine the cranberries, pistachios, and honey in a bowl and mix well.

Arrange the mini shells on a baking sheet. Fill mini shells with cheese. Top with the cranberry/nut mixture and bake for 5-7 minutes, or until the cheese melts.
