Turkey & Egg White Breakfast Sandwich

Breakfast is by far my favorite meal of the day. I would eat blueberry pancakes with a side of potatoes any day of the week. But I also like to switch up my palate by mixing in smoothies, scrambles, and this turkey and spinach with egg whites served on a whole wheat english muffin. It tastes great and keeps me nice and full all the way up to lunch time. This is a great on-the-go breakfast and can be enjoyed by all ages!

Breakfast Sandwich

Ingredients:
  • 1 egg white
  • Small handful of fresh spinach
  • 1 or 2 slices of shaved turkey breast
  • Whole wheat english muffin
  • Salt and pepper to taste
Toast english muffin. Meanwhile heat a small skillet over medium-low heat and spray with cooking spray. Cook egg white for 1 minute, then flip it over to cook the other side. While the egg is finishing cooking, top it with the spinach and turkey and let it heat through. Season with salt and pepper if needed. Place in between the english muffin and enjoy.
