Spicy Buffalo Cauliflower "Wings"

I am in no way a vegetarian, but sometime's it's nice to be able to experiment with ingredients other than meat. I found a recipe for vegetarian wings on the PETA website, and altered it a bit to maximize flavor with minimal ingredients. These "wings" are not actually wings, but cauliflower florets, battered and baked in spicy buffalo sauce. Serve them with celery sticks and ranch or bleu cheese dressing just like you would at your favorite sports bar. Sit back, turn on some football, and enjoy these alone on your couch, or try them out for your next big party!

Spicy Buffalo Cauliflower "Wings"

Ingredients:

  • 1 head cauliflower, cut into florets
  • 1 cup water or milk
  • 1 cup flour
  • 2 tsp. garlic powder
  • 1 cup buffalo sauce
  • 2 tbsp. melted butter or olive oil
Preheat oven to 450 degrees F.

In a bowl whisk together water/milk, flour, and garlic powder until smooth. Coat florets in batter and place into a shallow baking dish.

Bake in the oven for 18 minutes. Meanwhile mix together the buffalo sauce and oil/butter in a small bowl.

Pour buffalo mixture over baked florets and bake for another 5-8 minutes. Serve with celery sticks and your favorite dipping sauce.
