It's that time of the week again... yup, you guessed it, another quinoa recipe! You know I am sucker for the little grain and this week I served up a quinoa salad filled with seasonal summer veggies like cherry tomatoes, avocado, and fresh cilantro. I mean seriosuly, who doesn't like that combination? For one the colors are so much fun, and you can go back for a second serving without feeling like you're going to expand like a balloon at the dinner table. A single 1/2 cup serving is only 250 calories, so this makes a great side dish at dinner, or a perfect light lunch.
Summer Quinoa Salad
Ingredients:
- 1 1/2 cups cooked quinoa
- 1/2 cup cherry tomatoes, halved
- 1 avocado, pitted and chopped
- 2 tbsp. fresh cilantro, chopped
- 1 tbsp. olive oil
- salt and pepper to taste
Mix all of the ingredients together and serve.
It doesn't get easier than this.
