One of fellow sorority sisters from college, who happens to be rightly nicknamed "Martha Stewart" for her homemaking abilities, threw an Olympics opening ceremony party and asked me to bring a little something to snack on. I took her words literally and decided to make mini meatballs coated in a spicy, but sweet glaze. And let me tell you, they went faster than the sprint runners!! (corny Olympics joke I know) These are extremely simple, and taste almost as delicious as Ryan Lochte looks. (I can't seem to stop with the Olympics jokes). Go Team USA!!
Honey Chipotle Meatballs
Ingredients:
Mix turkey, onion, garlic, cilantro, salt, and pepper together. Form 25-30 mini meatballs with your hands.
Brown meatballs on all sides in a skillet with 2 tsp olive oil. Then finish off by baking them in the oven for 5 minutes on 375 degrees.
Meanwhile, heat chipotle and honey in a small saucepan until warm and blended well. Pour over meatballs and stir to coat.. serve warm.
*I kept mine warm by serving them out of my mini crock pot on low heat
