My mom has made this spicy cheese dip for as long as I can remember. Its a great mix of ground beef, green, chiles, tomatoes, and of course the queso! Whenever my brother comes home to visit from the Navy my mom is sure to have a crock pot on the counter ready to serve with tortilla chips. I made sure that this was present at a recent birthday party we hosted at my house and it is still as popular as ever. Just throw everything in the crock pot and you are done!
Chile Con Queso
Ingredients:
Preheat a large skillet on the stove and brown the beef and sausage until cooked completely. Drain out any excess liquid and discard.
Add cooked beef and sausage, tomatoes, green chiles, and velveeta to crock pot. Turn on high and allow cheese to melt completely. Stir occasionally. Serve with tortilla chips.

- 1 lb. spicy ground sausage
- 4 8-oz. cans Herdez salsa mix
- 1 can green chiles, any size of your choice
- 1 package of Velveeta

*If you would like it a little bit on the spicier side, feel free to add a chopped jalapeno.
