Whole Wheat Waffles

Whole grain, whole wheat, whole lot of goodness. I woke up early this Saturday morning craving a large stack of waffles. But seeing as I am the maid of honor in my best friends wedding in a few months, I figured I should cut back on the carb overloads. Having no self control, I decided just to make a healthier version of carbicide. Waffles, filled with whole wheat pastry flour, wheat germ, and chia seeds.

Whole Wheat Waffles


Ingredients:

  • 2 eggs, beaten
  • 1 3/4 cup skim milk
  • 1/4 unsweetened applesauce
  • 1 tsp. vanilla extract
  • 1/4 cup canola oil
  • 1 1/4 cup whole wheat pastry flour
  • 1/4 cup wheat germ
  • 2 tbsp. chia seeds
  • 1/2 cup all purpose flour
  • 4 tsp. baking powder
  • 1/4 tsp. salt
  • 1 tbsp. sugar (omit this if using sweetened applesauce)
Whisk together in a large bowl the eggs, milk, applesauce, vanilla, and oil. Then whisk in remianing ingredients until smooth. Cook in batches with a waffle iron until golden brown. Serve. You can also freeze the leftovers and pop them in the toaster for a quick breakfast.
