Pizza Puff Muffins

Just something fun, easily adaptable to whatever you have lying aound the house. These could be great with pepperoni in them, or even mixed veggies!

Pizza Puff Muffins


  • 1 cup flour
  • 1 tsp. baking powder
  • 1 cup milk
  • 1 egg, lightly beaten
  • 1 cup shredded mozzarella cheese
  • 1/2 cup diced tomatoes
  • fresh basil leaves, chopped
  • pizza sauce for sipping
Preheat oven to 375 degrees. Grease a 24-cup mini muffin pan. In a large bowl, whisk together the flour and baking powder; whisk in egg and milk. Stir in the cheese, tomatoes, and basil. Let stand for 10 minutes. 

Stir the batter and divide among the muffin pan. Bake until puffed and golden, 20 to 25 minutes.

Warm the pizza sauce in the microwave, and serve the puffs with the warmed sauce for dipping.
