Roasted Nuts

This isn't your average bar snack. A little smoky, a little spicy, and all yummy yummy yummy. The freshly chopped rosemary really brings a great element to these mixed nuts, and helps cut out the saltiness. This takes almost no time at all to create, but tastes to decadent!

Roasted Nuts

Ingredients:

  • 5 cups mixed nuts
  • 1/4 cup olive oil
  • 3 tbsp. chopped rosemary
  • 2 tsp. chili powder
  • 1/2 tsp. cumin
  • 1/2 tsp. cayenne pepper
  • 1/2 tsp. freshly ground black pepper
  • salt to taste (if you use salted nuts, leave the extra salt out)
Preheat oven to 350 degrees F. Prepare a jelly roll pan with wax paper and set aside.

In a small saucepan, heat olive oil over medium heat. Add in the rosemary, chili powder, cumin, cayenne, and pepper. Mix well, but careful not to let burn. Cook for about 1 minute until fragrant.

Pour nuts into a large mixing bowl and pour olive oil mixture into bowl. Mix well until all nuts are coated. Spread them out onto the prepared pan and bake for 15 minutes, tossing once until golden brown. Keep an eye on them, because they burn quickly.

Let cool to room temperature before serving.
