Sweet Potato Chips

Most people are very adamant about their snack preferences. Where some people may find a sweet tooth, I in fact would prefer a bag of chips over a bag of skittles or a snickers bar any day. My favorite go to snack is Terra Sweet Potato Chips. But like most manufacturers, you open the bag and half of it is air, while the other half of the bag is filled with crumbs that used to be full-sized chips. I solved this age old problem by making my own sweet potato chips. Plus I got to enjoy a glass of wine while waiting for them to finish baking!

Sweet Potato Chips

Ingredients:

  • 1 large sweet potato
  • olive oil
  • sea salt
Preheat the oven to 400 degrees F. Wash and scrub the sweet potato, then dry. Cut the ends off and using a mandolin, slice the sweet potato into very thin slices. Drizzle the "chips" with olive oil and align them on a baking sheet. Sprinkle them with sea salt and bake for 10 minutes. Flip the chips over and bake for another 10 minutes.
