Pumpkin Chocolate Chip Muffins

Pumkpin Pie. Pumpkin Scones. Pumpkin Penne. Pumpkin Cookies. These are all things you will be seeing pop up here on HDFB in the next coming weeks. I tend to stock up on canned pumpkin and incorporate it into anything I can, case in point... Pumpkin Chocolate Chip Muffins.

Pumpkin Muffins

Ingredients:
  • 1 1/2 cups canned pumpkin
  • 1/2 cup whole wheat flour
  • 3/4 cups all purpose flour
  • 3/4 cup sugar
  • 1 tsp baking soda
  • 2 tsp pumpkin pie spice
  • 1/2 tsp nutmeg
  • 1/4 tsp cinnamon
  • 1/4 tsp salt
  • 2 tsp unsweetened applesauce
  • 2 egg whites
  • 1 1/2 tsp vanilla extract
  • 1 cup chocolate chips

Preheat your oven to 350 degrees F.

In a medium bowl combine flours, sugar, baking soda, pumpkin pie spice, nutmeg, and cinnamon. Set aside.

In a stand mixer, mix applesauce, egg whites, pumpkin, and vanilla until mixture thickens.

Add flour mixture slowly until just combined. Fold in chocolate chips.

Fill muffin pan with liners or spray with cooking spray. Fill all 12 muffin slots in the pan and bake for 24 to 26 minutes, until a toothpick inserted to the middle of a muffin comes out clean.
