While I was in Iowa last week, my amazingly hospitable hosts decided to throw a slightly impromptu delayed engagement party/celebration of Ashley's first week of opening her bridal shop/me being in town/it was a Saturday night, so why not invite everyone in town to have some drinks and good food. We wanted to be able to make all easy to eat food, so people didn't have to carry around plates, leaving their hands free for beer and wine, becuase that's what is important! Ashley made these mini caprese skewers, and they were such a hit!
Caprese Skewers
Ingredients:
- 1 pkg. mini mozzarella balls
- 1 small bunch fresh basil leaves, cut into 1/2 inch pieces
- 1 cup of grape or cherry tomatoes, cut in half
- 1 tbsp. balsamic vinegar
- 1 tbsp. olive oil
- toothpicks
On a toothpick slide on one mozzarella ball, half of a tomato, and a basil leaf. Continue to do so until you have as many skewers as you would like. Drizzle balsamic and olive oil over the skewers just before serving.
