It's grillin' season. Chicken, steak, and hot dogs are in high demand in my household. What goes better while you're waiting for that juicy piece of tri-tip to come off of the grill, then to munch on some Cowboy Caviar. The mix of veggies, spice, and crunchy tortilla chips never disappoints. It takes about 5 minutes to put together and can be devoured immediately, or it can sit in the fridge and marinate for a few hours, or up to a couple of days. My Dad swears on this mixture of yumminess, and brags to his friends about it, which ultimately led me to writing about it here.
Cowboy Caviar
Ingredients:
- 1 can corn kernels
- 1 can black beans, drained and rinsed
- 1 jalapeno, minced
- 2 garlic cloves, minced
- 1/2 red onion, chopped
- 1 can diced Rotel diced tomatoes with habeneros (or whatever flavor you prefer)
- 1/2 bottle of Italian salad dressing
- 1/4 cup fresh chopped cilantro
- Salt & Pepper
It's as simple as this. Combine all ingredients in a large bowl and mix well. Serve with tortilla chips.
