Rainbow Marshmallow Treats


I could have gone the traditional route for St. Patrick's Day and made creme de menthe brownies or shamrock shakes, but since I made Lucky Charms Ice Cream last week, and Lucky Charms Marshmallow treats last year, I decided to stick with the theme, and keep my St. Patty's Day fun strictly to a cereal-based dessert. These Fruity Pebble marshmallow treats are the perfect pot of gold at the end of your rainbow. So have a green beer and toss this gluten-free, 3-ingredient dessert together. You'll be the star of the show!


Rainbow Marshmallow Treats

Ingredients:
  • 3 tbsp. unsalted butter
  • 1 bag mini-marshmallows
  • 6 cups Fruity Pebbles cereal

Prepare an 8x8-inch (for thicker) or 9x13-inch (for thinner) baking sheet with non-stick cooking spray.

In a large pot, heat the butter over medium heat until melted completely. Add in the bag of marshmallows and stir continuously until they are completed melted into the butter. Remove from the heat and toss in the cereal. Mix well until the cereal is completely coated in the marshmallow mixture.

Pour into the prepared baking sheet and press down firmly with a rubber spatula. Let cool to room temperature.

Cut into squares with a knife and serve.
