The other night on a grocery store run, my boyfriend stumbled upon some chicken sausage stuffed with green apple and smoked gouda. O. M. G. Smoky. Sweet. All of the good things in life. But this isn't a recipe on how to heat up sausages. This about a simple side dish to serve along that chicken sausage, or whatever it is that you are having for dinner, or breakfast for that matter! The funny thing about sweet potatoes is that they are not orange like most people think. The orange ones that you normally see around Thanksgiving are actually yams. So if you want to make this with sweet potato, look for ones with golden or copper skin. Yams are usually red or purple in color, but either type can be used here. I'm all about versatility. 1 sweet potato will serve 2 people. So just double it as needed for a larger party.
Simple Side Dish: Sweet Potato Hash
Ingredients:
- 1 sweet potato, peeled, and cut into 1/2-inch cubes
- 1/2 small onion, chopped into similar sized cubes
- 1 large garlic clove, minced
- 1 tbsp. olive oil
- salt and pepper to taste
Preheat oven to 400 degrees F.
Meanwhile, add the cubed sweet potatoes to a large pot of water and birng to a boil. Boil over high for 10 minutes until they begin to soften. Drain and set aside.
On a baking sheet, add the cooked sweet potatoes, chopped onion, garlic, olive oil, salt, and pepper. Mix well with a spatula or spoon and place in the oven.
Cook for 20 minutes, allowing them to begin getting crispy and brown. Remove form the oven, mix the potatoes and place back in the oven for another 10 minutes.
Let cool for a minute or two before serving. Feel free to add a sliced chili or two to add some heat.
It's funny cause I looked at your pictures first (then salivated over them of course), and then I thought to myself, "I thought sweet potatoes were orange"...and then I read your opening paragraph and was like, "oh. She must've read my mind." Hahahaha
