Who doesn't love chocolate pudding? Remeber when you would open your lunch box at school and find a snack-pack? Well, imagine being able to make your very own chocolate pudding at home with all healthy ingredients. Today I bring to you chocolate pudding made with creamy avocados...yes I said avocados!, and if I hadn't told you this, you would never know. It tasts that good! Plus, each 1/2 cup serving has only 123 calories, 9.4g fat (healthy fats from the avocados), 6.7g of fiber, and 2.5g of protein!
Chocolate Avocado Pudding
Ingredients:
makes 6 servings
- 2 avocados, peeled and cut
- 1/2 cup unsweetened cocoa powder
- 1/4 cup raw honey or agave nectar
- 2 tbsp. plain non-fat greek yogurt
- 1/2 cup unsweetened vanilla almond milk
- 2 tsp. vanilla extract
- pinch of sea salt
Place all ingredients in your food processor and blend until smooth. Top with chocolate chips, whipped cream, or just enjoy on its own!
