Happy Tuesday all! Just want to start out by giving a shout out to my Tini Tuesday happy hour group. We have been meeting (almost) every Tuesday for drinks and witty banter for a year today! While we rekindled old friendships, we have started new friendships, and I wouldn't have met my boyfriend! So happy Tini to all!
That's what's been going on outside o my kitchen, but here is my most recent creation IN the kitchen! Anytime I have some down time, I like to search for fun recipes to make for dinner, or on my weekends for fun. I usually end up sending my boyfriend an e-mail full of food porn, letting him make the final decision of what we make. Last weekend these little cheesy beauties beat out everything else, and I am so glad that they did! The smoky flavor from the chili powder, plus the sweetness from the mango makes for a great combination. Plus, these quesadillas also have bacon in them, and we all know that everything is better with bacon!
Chili Mango Chicken Quesadillas
Ingredients:
- 4 tortillas
- 6 oz. grilled chicken, chopped
- 1/2 mango, sliced and chopped
- 1/2 tsp. chili powder
- 1/4 sweet onion, caramelized (cooked until they are brown, but not burned)
- 4 slices of bacon, cooked and chopped
- 4 oz. mexican blend shredded cheese
Preheat a skillet or a quesadilla maker to medium heat. Place one tortilla down, then top with 1 oz. of the cheese. Sprinkle 1/2 of the chicken, 1/2 of the mango, 1/4 tsp. of the chili powder, 1/2 of the onions, and half of the chopped bacon over the cheese. Top with another ounce of cheese and place the second tortilla on top. Press down firmly and cook on both sides until brown and crisp.
