Hawaiian Chicken Burgers



I may not be able to take time off of work and head down to the big island for some fun in the sun this summer, but I sure can make something for dinner that tastes like summer in Hawaii. That's the next best thing, right? After a matinee movie with my boyfriend we decided to head to the store and pick up some fresh produce and grill up some burgers. Chicken breasts topped with grilled jalapeno and pineapple gives you the sweet and spicy factors, and the teriyaki marinade leaves the chicken full of flavor.

Hawaiian Chicken Burgers
Serves 2

Ingredients:
  • 2 thin chicken breasts
  • 1 pineapple, cut into 1/2 inch thick slices
  • 1 jalapeno, thinly sliced, or you can use pickled
  • 2 slices Swiss cheese
  • 2 hamburger buns
In a shallow dish or sturdy ziplock bag, marinate the chicken in teriyaki sauce for 30 minutes, or up to overnight.

Fire up the grill or stove-top griddle to high heat. Spray with non-stick cooking spray and turn heat down to medium.

Grill the chicken breasts about 3-4 minutes on each side. While the chicken is grilling, grill the jalapeno slices for 1 minutes. Remove and place on top of the chicken breats. Top each breast with a lisc eof swiss cheese before removing from the heat.


While the chicken is resting, grill the pineapple slices for 1-2 minutes on each side, until they start to caramelize. Grill the buns for 1 minute as well. Top the grilled pineapple on the chicken breast and finish off by placing into the bun. Serve warm!
