Today's post is inspired by the Seeds of Change product that I recently bought at Costco. The mixture of brown rice and quinoa is a great and quick fix for dinner when you may not be completely sold on making a gourmet meal for one. I sliced up some jalapeno chicken sausage and bell peppers, tossed them with the quinoa and wala...dinner!
Quinoa & Brown Rice with Chicken Sausage & Peppers
Ingredients:
- 1 package Seeds of Change Quinoa & Brown Rice
- 1 jalapeno chicken sausage (I LOVE Trader Joe's), sliced
- 4 small red and orange bell peppers, thinly sliced
Cook the quinoa and brown rice according to package directions.
Meanwhile, heat a medium skillet over medium heat. Add in the sausage and bell pepper slices. Cook until slightly browned.
Toss sausage and peppers with quinoa. Serve!
