BLTA's With A Twist


BLT's are now a thing of the past since the avocado found its way into the delicious combo, which is now known as the BLTA. My next addition will blow your mind...are you ready? Are you sure? Once you have seen this its hard to crave anything else....top your BLTA with an over easy egg. Yup. Just as suspected. Mind blown. Well, what are you waiting for? Get cooking!

BLTA's with an Overeasy Egg

Ingredients:
  • 4 slices multi grain bread
  • 6 slices thick center cut bacon
  • 1 avocado, cut into slices
  • 1 tomato, thinly sliced
  • Baby romaine lettuce
  • 1/4 cup mayo with olive oil
  • 1 tsp. Sriracha
  • 2 eggs
  • Salt and pepper

Preheat a large pan over medium high heat. Cook the bacon until crispy, pat excess oil off with a paper towel and set aside.

Meanwhile, toast all of the slices of bread. Whisk together the mayo and the sriracha and spread a thin layer onto each slice of toasted bread.



Once the bacon had finished cooking, remove any excess oil from the pan, lower the heat to low, and fry two eggs over easy, or to your preferred doneness.

Prepare sandwiches by layering the tomato slices, avocado, a small handful of lettuce, and 3 slices of bacon on to each sandwich, seasoning each layer with salt and pepper.

To your sandwiches with the remaining of bread. And just like that you are having sandwiches for dinner!!
