Meatball Subs

While my brother was in town for Christmas this past week, he was craving a meatball sub. Now, while he could have easily gone out and gotten one from a local sandwich shop, I took it upon myself to make him one homemade. I used my default meatball recipe, but formed the meatballs slightly larger to fit well into our sub loaves. Topped with marinara and shredded mozzarella cheese, these were a great hit amongst my family.

Meatball Subs

Ingredients:

  • 1 batch of my meatball recipe
  • 1 jar of your favorit marinara sauce
  • 1 cup shredded mozarella
  • 6 sub sandwich bread loaves
Prepare the meatballs as directed, but form 2-inch sized meatballs.

While the meatballs are finishing cooking in the oven, slice your bread in half without cutting all of the way through, and toast in the oven during the last 3 minutes of cook time.

Remove the meatballs and the bread loaves. Load 3 meatballs into each loaf of bread, top with a little bit more marinara sauce and 2 tbsp. of shredded mozzarella. Once all loaves have been filled, place them on a baking sheet or dish and place in the oven just until the cheese melts, 2-3 minutes.

Serve hot.
