Waking up in the morning to smell fresh sweet banana and cinnamon aromas coming from your kitchen is hard to beat. I imagine the only way this scenario could get better is if you had a chef to make them for you. But since I am guessing most you don't have this luxury I'm providing you with an amazingly simple and delicious waffle recipe that allows you to freeze and heat up in the toaster in the morning for that freshly baked feeling.
Banana Waffles
Ingredients:
- 1 cup all purpose flour
- 1 cup whole wheat flour
- 2 eggs, beaten
- 1 3/4 cup almond milk
- 1/2 cup unsweetened applesauce
- 1 ripe banana, mashed well
- 1 tbsp. sugar
- 4 tsp. baking powder
- 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1 tsp. vanilla extract
Preheat your waffle iron and coat with non-stick cooking spray. Whisk the eggs in a large bowl until fluffy. Then whisk in the milk, applesauce and vanilla with the egg mixture; set aside.
In a separate bowl, combine the flour, sugar, baking powder, nutmeg, and cinnamon. Beat the flour mixture in with the egg mixture and add the mashed banana.
Carefully spoon your batter onto your pre-heated waffle iron and cook until golden brown. Repeat until batter is finished. Feel free to enjoy these fresh off the iron, or freeze them in a ziplock for future consumption.
