Christmas Chicken

What's more appealing than red, white, and green chicken at Christmas time? The creaminess of mozzarella, the freshness of basil, and the strong flavor of roasted red bell peppers are all tied together with a balsamic reduction prepared over grilled chicken breast. Perfect for entertaining guests.

Christmas Chicken


  • 4 chicken breasts
  • 1 mozarella cheese ball, sliced
  • 2 roasted red bell peppers, split in half
  • 8 large fresh basil leaves
  • 1 cup balsamic vinegar

Prepare grill, and grill chicken until done.

While grilling, place small pot on stove and bring vinegar up to a boil, reduce to simmer, and then reduce liquid by half.

As chicken is just finishing up, top with 2 pieces mozzarella, 2 pieces basil, and 1/2 of roasted red pepper. Let cheese start to melt on grill, then transfer to plates. Drizzle with balsamic reduction.
