My Crab Cakes

To those of you that know my Dad, or as he is otherwise known; Cowboy Dave, then you know that he loves a good party. He just returned from 10 days on my neighbor's (conveniently nicknamed Big Dave) boat where they sailed the coast of Washington and Canada. Usually he only comes home with drunken stories, but this time he returned with a solid pound of fresh caught crab meat that he caught, de-shelled, froze, and brought home in a cold-pack lined lunch-box. The first thing on my mind when I have fresh crab available, of course is crab cakes!!


My Crab Cakes:


Ingredients:

  • 1 lb. lump crab meat, pick through for shells
  • 1 tbsp. plus 1/2 cup olive oil
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped celery
  • 1 egg
  • 2 tbsp. mayonnaise
  • 1 tsp. red pepper
  • 1 tsp. old bay seasoning
  • 1 tsp. worcestire
  • 1 tsp. hot sauce
  • 1 tbsp. lemon juice
  • salt & pepper to taste
  • 1 cup panko bread crumbs
Heat 1 tbsp. olive oil in a skillet over high heat. Saute onion and celery until tender; cool slightly.

Combine crab meat, egg, mayonnaise, red pepper, old bay, worcestire, hot sauce, lemon juice, salt & pepper, and 1/2 cup of panko bread cumbs in medium bowl. Form into 4, 1/2 inch thick patties.  Coat the patties with the remaining bread crumbs.

Heat 1/2 cup olive oil in skillet over medium high heat. Cook cakes until golden brown on each side. Drain briefly on paper towel and serve hot. Serve with lime wedges.
