Quirky Quinoa

Today I thought I would post something vegans, vegeterians, and meat eaters alike would all enjoy. Quinoa is a protein-rich seed that has a fluffy, creamy, slightly crunchy texture and a somewhat nutty flavor when cooked. 


Mediterranean Quinoa Salad


Ingredients:
1 cup quinoa
1 1/4 cup water or chicken broth
1 can black beans, drained and rinsed
1/2 cucumber, chopped
1/2 tomato, seeded and chopped
1/4 red onion, chopped
1/4 cilantro chopped
1 small can sliced olives
1/4 cup olive oil
1 tbsp white wine vinegar
salt & pepper to taste


Soak quinoa for 15 minutes, then rinse in strainer for 3-4 minutes.

Bring quinoa and broth to a simmer, cover and simmer for 30 minutes.

In a small bowl whisk oil, vinegar, salt, & pepper to make a dressing.

Combine all veggies and quinoa in a medium bowl, toss with dressing.

Chill for 30 minutes. Serve.

I like to crumble a little goat cheese on top of the finished product, but I will eat goat cheese on top of an old leathery shoe, so take my suggestion with a grain of salt.
