Blueberry Chia Breakfast Pudding


On most days of the week I will have a green juice for breakfast. But there are some days where I just want to reach for a sugary donut or pastry of any kind. But apparently it's spring already. Like, hello March Madness...where did you come from? And we all know that spring means sun, fun, and bikinis. So skip the donuts and have this healthy sweet treat instead!

Blueberry Chia Breakfast Pudding
Makes 2 Servings

Ingredients:
  • 1 cup frozen blueberries
  • 6 tbsp. almond or soy milk
  • 2-3 large pitted dates, soaked in hot water to soften
  • 1/3 banana, sliced and frozen
  • 1/4 cup chia seeds
In a food processor, blend the blueberries, milk, dates, and banana slices until smooth. 

Transfer the blueberry mixture to a medium bowl and mix in the chia seeds. Place the pudding into the fridge and stir the mixture every 5 minutes for 30 minutes so that the mixture can thicken and the chia seeds can absorb some moisture and soften.

Serve cold immediately, or let sit overnight.
