Buffalo Chicken Quinoa Bites


It's been a little while since I've cooked with quinoa, but this really sparked up my interest to start using it again. I love how versatile quinoa can be, and turning into a mock buffalo wing is pretty innovative if you ask me. I was a little nervous that my boyfriend wouldn't like these and blow them off as health food, but once I let him know there was chicken, buffalo sauce, and cheese in these babies he was all ears!

Buffalo Chicken Quinoa Bites

Ingredients:

  • 1 cup cooked quinoa
  • 1 cup shredded chicken
  • 1/4 cup goat cheese
  • 1/4 cup sharp cheddar
  • 1/4 cup buffalo sauce
  • 1/4 cup panko
  • 1 large egg, beaten
  • 2 tbsp. whole wheat flour
  • salt and pepper to taste
Dipping Sauce
  • 1/2 cup greek yogurt
  • 1/2 cup ranch dressing
  • 1/2 tsp. garlic powder
  • 1/2 tsp. dried dill
  • 1/2 tsp. dried parsley
  • salt and pepper to taste

In a small bowl, combine greek yogurt, ranch dressing, garlic powder, dill, parsley, salt and pepper. Set aside in the refrigerator.

Preheat the oven to 350 degrees F. Lightly oil a mini muffin pan or coat with non-stick cooking spray.

In a large bowl, combine the quinoa, chicken, goat cheese, sharp cheddar, buffalo sauce, panko, egg, flour, salt, and pepper.

Using a small cookie scoop, scoop the mixture and form into balls, placing each ball into the muffin tin, about 1 1/2 tbsp. of mix for each ball.

Place into the oven and bake for 18-20 minutes until golden and set.

Serve immediately with dipping sauce.
