Too Hot to Trot Salsa

We are supposed to get out first 100 degree day this weekend, and what better way to enjoy the onset heat than with a freshly prepared homemade salsa? As we all know, salsa comes in many different forms, colors, textures, etc., but what do they all have in common?


All. Salsa. Is. Delicious...or should I say, delicioso?


This particular salsa is a salsa picante, which is blended smoothly to perfection and then roasted in a sauce pan until it turns a deep reddish brown color. Get out your tortilla chips becuase it's gonna be a hot one!

Salsa Picante


Ingredients:

  • 3 medium tomatoes, cored and quarted
  • 3-4 garlic cloves, peeled
  • 1-2 jalapenos, roasted and stems removed
  • handful or fresh cilantro
  • 2 stems of green onions
  • 3 tbsp. water
  • 1 tbsp. olive oil
  • salt and pepper
Add tomatoes, garlic, jalapenos, cilantro, green onions, and water to a blender and blend until smooth.

Add oil to a deep heated skillet. Add to tomato mixture, salt, and pepper and simmer for about 20-25 minutes. Refrigerate until cold.
