Avocado Chicken Salad

Avocados. Delicious. Chicken. Yummy. Fresh herbs. Soooo flavorful. As I was lying in bed surfing the web for healthy lunch ideas that are easy to take and store to work, I stumbled across this amazing twist on chicken salad. You could eat this on a lettuce leaf, wrapped in a tortilla, or just plain out of the bowl. The key is that you use a small amount of mayonnaise (I prefer the kind made with olive oil, since I am not a fan of mayo in the first place). And the fact that you can use canned shredded chicken makes this a cinch to put together as you enjoy your morning coffee before work!

Avocado Chicken Salad


Ingredients:

  • 1 can cooked shredded chicken
  • 1 avocado, pitted
  • 1/2 tbsp. mayonnaise
  • 1 green onion, sliced
  • handful of fresh cilantro, chopped
  • juice of half of a lime
  • salt and pepper to taste.
Combine all ingredients in a bowl until mixed well. Store in an airtight container in the refrigerator until ready to use.
